Carnival Deer Processing was started in 2021 by Kevin Guilette and family. We have been skinning, cutting and packaging our own venison with family and friends for over 15 years. Over the years, more and more fellow hunters came to us for help. It was time to officially start our own business and fill a need in our community.
You might ask, why the name Carnival? Is it because folks who eat venison are CARNIVores? Clever, but no. Is it because carnivals have games that involve shooting fake guns at targets? Slightly plausible, but also no. Before us, our building was most recently home to Ahnapee Brewery. But it was originally built for the Carnival Guernsey Dairy, which operated here for about 40 years.
The building’s features made it an ideal location for venison processing. It has both a large walk-in cooler and walk-in freezer. The building was created to be sanitary, whether it was producing ‘Grade A’ milk, bottling specialty brews, or processing your deer. We also become an apple cider making facility for Red Barn Corn Maze each fall!
